Creamy Pesto

This is an awesome pasta sauce, great for dipping bread or even served as a cool salad dressing.  YUMMY!

1 tablespoon extra virgin olive oil
2 large cloves garlic, sliced
1/4 cup pine nuts
1/2 cup fresh basil
1 (16 ounce) container sour cream
3 tablespoons grated Parmesan cheese
Salt and pepper to taste

Put basil, pine nuts and garlic in food processor, blend until fully blended.  Add olive oil and Parmesan cheese.  Once fully incorporated add sour cream.
Transfer mixture to the stove, cook until hot, stirring constantly. 

Serve over pasta, chicken or use as dip for bread.

For salad dressing don’t heat, store in refrigerator for up to 7 days.
